LAGER AND LIME ICE CREAM
Serves 4-6
You need:
335 g caster sugar
150 ml water
4-6 limes ( finely grated rind and juice )
300 ml premium lager
300 ml double cream ( whipped)
1 freezer-proof container
blender/ food processor
freezer
Step 1
Place the sugar, water and lime rind in a medium sized pan
and heat gently until the sugar has dissolved.
Step 2
Bring to the boil and simmer for 5 minutes, add the lime juice
and lager and leave to cool.
Step 3
Pour into a freezer-proof container, cover, seal and freeze for
2 1/2 - 3 hours or until slightly firm.
Step 4
Spoon into a food processor or blender, add the cream and process until
smooth. Return to the freezer and freeze until solid.
